I love cooking and baking with konjac powder because I know I am making recipes with health benefits, it’s a creative outlet and I get to feel like a scientist. Like who knew you could make biscuits from cauliflower, konjac and protein powder?!

Ingredients

600g steamed fresh, or frozen and thawed cauliflower
2 scoops plain protein powder (or vanilla for sweet biscuits)
1/4 cup konjac powder
2 tsp baking powder
1/2 tsp salt

Instructions

Blend cauliflower as much as smooth as possible.

Add remaining ingredients to food processor and blend until smooth.

Let sit until it thickens up a bit.

Drop large dollops of batter on to parchment lined baking sheet and form into rounds.

Bake at 350F for 20-25 minutes.

Let cool. Freeze if not using immediately.
