Erica’s Konjac is the perfect consistency for this creamy peanut butter protein pudding with blueberry jam swirl!

Ingredients

1 large sweet potato, cooked and peeled
2 cups hot water
1 scoop peanut butter protein powder
2 tbsp powdered peanuts
1/2 tsp pure stevia powder (or other sweetener, to taste)
1/2 tsp salt
About 4 tsp konjac powder (depending on desired consistency)
1/4 cup  jam/compote

Instructions

Puree water and sweet potato flesh.

Add remaining ingredients (except jam/compote) to blender and puree until smooth.

Stir in jam/compote.

Refrigerate until set.
